I made this last night for supper and it was so easy and good I wanted to share it you could sub or add whatever vegetables you wanted for the stir fry. These are just want I had on hand.
Stir fry in a large frying pan or wok:
1Tbsp chopped ginger
*1-2 cut zucchini (roughly 7-8″ long)
2 bell peppers cut in chucks
1.5 cups whole snow peas
salt and pepper
*I use my mandolin to make zucchini noodles
For the Fish
1 lemon
1 Tbsp of fresh chopped ginger root
small splash of maple syrup or honey (no more than a tbsp)
salt and pepper
4 filets of your choice of fish (I used haddock)
Halfway into cooking your stir fry zest and juice the lemon into a small bowl, add chopped ginger and mix with syrup/honey and set aside. Heat up a separate pan than you have your stir fry in and add a little oil to the pan so it doesn’t stick. Once pan is hot gently lay in the fish filets and cook for 1-2 min. Flip them over and pour the lemon juice mixture over top, place the lid on the pan and cook a couple minutes more until the fish flakes easily and the sauce is reduced slightly (if your fish is really watery like mine was you can leave the lid off)
Dish up your stir fry and lay the filet on top and add a spoonful of the lemony sauce over the top. Enjoy!
